Which fire extinguishers should be used in a commercial kitchen?

Wet chemical fire extinguishers are designed specifically to tackle fires that start because of oils, fats and grease. This makes them ideal for commercial kitchens, allowing for employees to extinguish cooking fires without the splashing of oil and fat that risks spreading the fire further.

What is different about a kitchen fire extinguisher?

Kitchen fire extinguishers use a special chemical to create a layer over oils and fats. Whereas water from an extinguisher would evaporate or splash burning oils, wet chemical extinguishers can be sprayed over the fire to cool the liquids involved and put out the flames.

Can you use a CO2 fire extinguisher in a kitchen?

You should never use a CO2 fire extinguisher on a cooking fire involving oil and fats. This extinguisher type is most suitable for electrical fires.

Where should kitchen fire extinguishers be placed?

Kitchen fire extinguishers should not be placed close to sources of heat or flames, as this can prevent access to them in an emergency. Instead, they should be positioned by the exit, allowing for employees in your commercial kitchen to reach them, and encouraging them towards exits. According to BS 5306-8, extinguishers for cooking oil and fat risks should not require more than 10 metres of travel.
